Featured Food: Persimmons



Per.. si…mmmm..ons.  The name says it all. Thank you to Lee for sharing her famous and much anticipated holiday dish, her Persimmon pudding recipe.  Yum!

Persimmon Pudding

This is a recipe given to me a long time ago from an old friend – Subie Baker.

2 cups of very ripe persimmons – mushed
Beat 3 eggs and combine the following, wet and dry separately, then together:
1 1/4 cup honey (or brown sugar)
1 1/2 cup flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/2 cup melted butter
2 1/2 cup milk
Pour into 8″ x 14″ greased baking dish and bake for 1 hour at 350*
Test with a toothpick. Raisins and nuts can be added.
