Featured Food: Artichokes


Baked Artichoke Fritters


14 oz Artichoke hearts (pre-steamed)
2 Medium potatoes (pre-steamed and diced)
1/2 Cup green peas
1 Small yellow onion (diced)
1 Clove garlic (minced)
1 Egg (beaten)
1 Tablespoon olive oil
1/2 Teaspoon ground cumin
1/2 Teaspoon ground fennel seeds
2 Cups panko bread crumbs


Rough chop artichoke hearts in a food processor. In a bowl, combine artichokes with the other vegetables,egg, and spices. Form golf-ball sized patties and dredge in panko bread crumbs. Lightly drizzle each patty with olive oil and bake at 350 degrees for 30 minutes or until golden brown. Serve with ranch dressing or lemon mayonnaise. Makes about a dozen.
